WThis is an easy interpretation of a drink found on our latest menu. Designed as a party-sized prepared mix which is packed with the tastes of a Christmas time, which makes it ideal for a festive gathering. Any leftover citrus syrup for morning drinks, desserts, or to mix additional servings of this cocktail.

Makes enough for 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Combine the listed ingredients in a saucepan, bring to a gentle boil, stirring so the sugar melts. Then, turn off the stove and let it to cool down fully. Decant into a sealable bottle, cap it and store chilled, it will last for up to one month.
To make Batch Mix: Pour all the liquids in a sizeable container, leave to sit for one hour, then pass it through preferably using a fine cloth, making it perfectly clear.
For serving: Measure 85ml of your batch mix to a cocktail shaker filled with ice, gently stirring gently for one minute to cool it down. Pour to a cold coupe glass or a similar vessel, top with a few cranberries and finish using a light spray of mandarin oil above the glass.
